These professionals are responsible for planning and organising everything relating to the dining and drinks service, coordinating between the kitchen manager and dining area, supervising the waitstaff and seeing to customers' needs. Today they are also responsible for sales and promotion of the restaurant. They are normally referred to as the "maitre d'".


  • Plan and organise restaurant and bar service.
    Organize the resources required for providing correct service, including an efficient structure according to the type of establishment, its category and the expected economic return.
    Define, together with the person responsible for the kitchen and management of the establishment, the services to be provided (menu, set dishes, self-service, grill, etc.).
    Determine the team of waiters and their shifts.
    In some establishments, manage supplies and relationships with suppliers.
    Supervise the decoration and ambiance of the room to create a comfortable environment and an image in keeping with the type of service that the establishment expects to offer.
    Define the processes to be followed before (preparation of the tables), during and after (cleaning, preparation of later services) the service, and give instructions to ensure customer service, the desired quality levels and economic performance.
    Advise the customer on gastronomic aspects, as well as the services available near the establishment (businesses, cinemas, events, etc.)
  • Be responsible for the sale of the establishment's services.
    Develop a communication strategy to inform, promote and sell services, taking the needs of the recipient into account.
    Supervise collecting for the service.
